Perfect for easy weeknight dinners, just mix and stuff the pitas and lightly pan toast for dinner on the table in 15 minutes.
1 packet pita bread
Ingredients:
Spiced meat filling:
1/2 brown onion, diced.
500g lamb or beef mince (ground meat)
2 garlic cloves , minced
125g crumbled feta
1 tbsp finely chopped parsley
3 tsp ground coriander
3 tsp ground cumin
1 1/2 tsp smoked paprika
3/4 tsp ground allspice (sub mixed spice)
1/2 tsp cayenne pepper (optional for a kick of spice)
1 1/4 tsp cooking/kosher salt
Tahini yogurt dipping sauce :
1 cup plain yogurt
2 tbsp tahini (or Chinese sesame paste, if you have 2 tablespoons of tahini (or Chinese sesame paste, if available)
1 tbsp lemon juice
1 garlic clove
finely grated 1/2 tsp cooking/kosher salt

Method:
- Cut pita breads down the centre into half moon shapes.
- Sauté minced garlic and chopped onions in pan until fragrant and translucent.
- Combine mince, garlic, parsley, feta, coriander, cumin, paprika, allspice, cayenne and salt in a mixing bowl.
- Stuff pita bread openings with mince mixture.
- Heat oil in pan and toast pitas for approximately 3 minutes on each side until golden and crispy.
- Cut pitas halves in half again to make sure mince is fully cooked, if it requires longer you can put them in the oven (or air fryer) for an additional 3 minutes on 180 degrees celcius.
- In a separate small bowl combine yogurt, tahini, lemon juice, garlic and salt to make the perfect yogurt pairing sauce to dipped your stuffed pitas into.
