This recipe is so easy to throw together on those busy weeknights and only requires 5 ingredients with the option of basil to sprinkle on top, to incorporate that fresh herb flavour.
Ingredients:
¾ cup basil pesto
1 ½ cups penne pasta
2 cups shredded chicken
½ cup parmesan cheese, finely grated
60g baby spinach
½ tbsp basil leaves
Instructions:
- Cook pasta in a large saucepan of boiling salted water. Drain once pasta is cooked, reserving ¼ cup pasta water.
2. Return pasta to pan, then add pesto and reserved water and toss to combine. Add chicken, spinach and parmesan, season and gently toss to combine.
3. Add pasta to airtight container and scatter over extra parmesan and basil.
