As an avid brownie lover, as well as someone who enjoys trying new things. I cane across this recipe as a healthier alternative to my regular ooey gooey chocolate delight and can honestly say these blondies are delicious and you need to try them out !
Ingredients:
1 cup butter, melted
1 1/2 cups light brown sugar
1 tablespoon nutmeg, ground cloves and cinnamon
2 teaspoons vanilla
1 teaspoon kosher salt
1 teaspoon baking powder
1 egg
1 cup pumpkin purée (I like to boil and mash pumpkins for the purée but you may also find a canned alternative at your local grocery store).
2 1/4 cups all-purpose flour
½ cup marshmallows, cut in half (alternatively mini marshmallows work great for this recipe as well)
2 cups white chips
Method:
1. Preheat oven to 180°C Line a 9×13 pan with foil or parchment paper and coat with non-stick spray. Set aside.
2. In a large mixing bowl combine the melted butter and sugar. Using a wooden spoon or rubber spatula, stir to combine. Add in the pumpkin pie spice, vanilla, salt, baking powder, egg, and pumpkin and mix until smooth.
3. Evenly mix in the flour until incorporated.
4. Stir in the white chocolate chips and marshmallows,
5. Spread the batter evenly into the prepared pan. Bake for 30-35 minutes, or until set in the middle.
6. Allow the blondies to cool completely before slicing into bars.
