Cheats Swedish Meatballs

If you were like me growing up, you’ll understand when I say the best thing about going to Ikea when you were younger was the food court. I would beg my mum to buy the Swedish meatballs from the freezer and few extra packets of that heavenly gravy sauce on every visit. While this recipe might not taste exactly the same, it still fills my belly with the same nostalgic flavours that I was obsessed with.

I have attempted quite a few recreations of Swedish meatball recipes over the years and can honestly say this is my go to. It’s a very basic recipe in which you can add extra spices to change the flavor palette to your particular style.

All you need for this recipe is the following ingredients:

500g mixed pork and beef mince

1/2 large brown onion, diced into small pieces

300ml light thickened cream

1 egg

200g panko breadcrumbs

2 tbsp soy sauce

salt to taste

lingonberry / cranberry sauce (optional)

Method:

  1. Soften onions in frying pan on medium heat.
  2. Transfer onions to a large mixing bowl, add mince, 1/3 of the cream, egg, breadcrumbs and a pinch of salt.
  3. Mix thoroughly to combine, if too wet add more breadcrumbs, if too dry add more cream.
  4. Form balls out of the meatball mixture, i usually get 18-20 meatballs.
  5. Cook meatballs until completely cooked through, roughly 10 minutes, occasionally rotating for even browning.
  6. In a separate saucepan add the remaining thickened cream and soy sauce, simmer on a low heat until brown and thickened, it will become a gravy like mixture.
  7. When ready to serve, pour gravy over meatballs, add berry sauce of choice to the side for optional dipping.

I love pairing this timeless dish with potatoes in any form, it leaves the heart and belly feeling full and satisfied.
