Brown Rice Salad

I remember the first time I had this salad was at my beautiful Aunt’s Christmas lunch. After that it was over. I’d found it, my new favourite salad.

It’s fresh, fruity, and delicious. Let me know your thoughts if you try this recipe..

Ingredients:

1 1/2 cups cooked brown rice

1/2 cup Spring onion, sliced

1/3 cup Currants

1/2 cup Cranberries

1/4 cup Cashews

1/4 cup Parsley, chopped

Chives to taste

Dressing:

2 tbsp Soy sauce

2 tbsp Olive Oil

1tbsp Lemon Juice

1 Garlic Clove, minced

Method:

  1. In a salad bowl, combine rice, spring onion, currants, cranberries, cashews, parsley and chives.
  2. In a separate bowl, combine olive oil, lemon juice, garlic, salt and pepper. Mix well.
  3. Pour dressing over salad, stirring to incorporate.
  4. Refrigerate for at least one hour before serving.
