A classic staple recipe, great as an easy side dish or as my family and friends know it as the go to recipe to bring to family gatherings. Using this special ingredient not only changes the flavour, but really changes the game for potato bake lovers such as myself.
I like to use a vegetable slicer on the mandoline setting to ensure consistently thin potato slices, similar to this one you can find on catch or amazon:

Ingredients:
4 potatoes sliced
300 g bacon rashers, diced
300 ml cream
100 ml milk
3 cups cheese, grated
Secret Ingredient: 1 tbsp Keen’s curry powder
Method:
- Preheat oven to 180 degrees Celsius.
- In a greased, ovenproof dish spread a layer of potatoes over the base.
- Create alternating layers of sliced potatoes, bacon and cheese.
- Continue until the dish is full, finishing with a generous layer of cheese on top.
- In a separate bowl combine cream, milk, curry powder and salt and pepper to taste.
- Pour cream mixture over the layered potato bake.
- Cover cooking dish in aluminum foil and cook in oven for 40 minutes.
- Check potatoes are soft and remove foil to cook at 200-210 degrees for a further 15-20 minutes until cheese layer on top is golden brown.
- Let cook for at least 20 minutes before serving.
